Heart Attack on a Plate – Worth It? Four Cheese Lasagna

I recently hosted a Downton Abbey season 3 premiere watch party, and was stumped with what to make for the gathering.  I knew I wanted to try a few new recipes, but was pressed on time.  I ended up recycling some MadhuKnitsandCooks.com favorites including the Rick Bayless roasted tomato salsa and a white bean dip, and chose to make just one new recipe.  I decided to anchor the meal with the Cook's Illustrated Four Cheese Lasagna, particularly because I had some leftover parmesan, gorgonzola, milk and parsley at home.  

The dish was AMAZING and fairly simple to make.  It was incredibly rich though, and definitely made me feel incredibly unhealthy eating it (and getting seconds was really a bit much).  I made a few modifications though, in the vein of "healthier" eating, including using low-fat ricotta, low-fat milk, and less gorgonzola.  I also made the lasagna in two new pans instead of one larger pan, which altered some of the ratios and layers for the dish and probably ended up making the dish more complicated to construct.  I will certainly make this dish again – but probably only in the winter when one can justify the need to eat such rich fare 🙂

    I agree that the 4 Cheese Lasagna was amazing! And it only added to the heart attack that was Episode 1 of Season 3 of Downton Abbey. Still not over the idea that Victorians were using roofies in the 1920s.
