Last year, I made the Cook's Illustrated Classic Mac and Cheese for a Superbowl party and ended up declaring it the "Standard Winter Party Dish." True to that statement, I recently included the Mac and Cheese in our first holiday party spread and it was a big hit.
Thankfully, unlike last year, I actually took a picture of the (partially eaten) mac and cheese, which appears below. And taking note of last year's blog comment on the recipe, I used a larger cast iron tray to broil the breadcrumb topping and because the mac and cheese didn't rise as high in this larger tray, there was no burning, smoke or resulting need to turn off the fire alarm!
