My First Blue Apron Recipe (but Not BA Order) – Red Quinoa & Black Bean Enchiladas

I'm not sure how I stumbled upon this recipe or website, but I recently tried my first Blue Apron meal – via online recipe, not through ordering one of their now seemingly ubiquitous meal kits.  The recipe was the protein-packed Red Quinoa & Black Bean Enchiladas with a Roasted Tomatillo Salsa Verde.  

Given Blue Apron's marketing and reputation as a weeknight meal provider, I tried this recipe when I got back from work one night.  Unfortunately though, the recipe took far longer than I expected and sadly the result wasn't to my taste.

First, the recipe took a lot of time and a lot of dishes to construct.  You have to boil the quinoa in a pot, roast the tomatillos and poblano in a baking pan, and then cook the cooled tomatillos and poblano in the quinoa pot.  And that's when you prepare the enchiladas with the filling, and then bake in the oven in a new casserole pan.  That's a lot of work for a weeknight dinner!

Ultimately, the flavor wasn't that amazing either.  It was a little bland for my tastes, which I was able to solve with some hot sauce, and I also didn't quite like the texture.  The beans and quinoa together were a little too heavy, and the texture of the more grainy quinoa with the heavy beans wasn't that pleasing.  I think if either the beans or quinoa were supplemented with vegetables, it would be a far better dish.
