My second new recipe for our almost-annual holiday party was the incredibly simple cheesy spinach wonton cups from Fresh Fit Kitchen (via Pinterest.) I wanted a true bite-size snack, and these baked cups were perfect for the season and party.

The wonton wrappers really crisped and browned up in the oven in only 10 minutes, and the filling was a great base to work from. The entire recipe also takes all of 10 minutes to put together, which makes it a great party food as well.
My initial version of this recipe was a bit more bland than I had hoped for, likely because I skimped on the key flavoring agents – the parmesan, red pepper flakes, and salt / pepper. I also substituted monterey jack for the mozzarella, but I think a slightly more flavorful cheese than both of those would also be a good addition as well. I'll report back when I find a blend that I really like, but in the mean time, these will be a staple at any large gathering we host!
